1 large yellow onion, finely chopped
2 cloves of garlic, minced
2 medium parsnips, cut into ¼-inch chunks
1 medium carrot, cut into ¼-inch chunks
1/2 cup dry quinoa
1 heaping tsp. dried thyme
1/8 tsp. cayenne pepper (a pinch more if you like a little more heat)
6-8 cups low-sodium vegetable stock
1 15-oz. can navy beans, rinsed and drained
1 15-oz. can full-fat coconut milk
4 cups spinach
