2 cups cooked quinoa, brown rice, or whole-wheat couscous
3 tsp. olive oil
1 medium yellow onion, sliced into thin rounds and halved
1 Tbs. garlic, minced
1/2 tsp. ground coriander
1 tsp. cinnamon
1 tsp. paprika
1 tsp. cumin
1 tsp. ginger, ground
Pinch of red pepper flakes, crushed
1/2 tsp. salt
1 1/3 cup vegetable or chicken broth
1/4 cup raisins
1 14.5-oz. can tomatoes, diced with juices
1 15-oz can chickpeas, rinsed and drained
