You’d Never Guess This Rachel Mansfield Recipe Is Healthy
I love making a big batch of these chocolate treats and freezing them so I can grab a few any time I want (they stay good for months!). They’re made with delicious and clean ingredients, yet they’re the perfect way to satisfy your chocolate cravings—plus they’re filled with extra goods to give you a nutritional boost.
Recipe: DARK CHOCOLATE SUPERFOOD CUPS
vegan, grain-free, gluten-free, paleo-friendly, nut-free
Serves: 15-20
INGREDIENTS
1 9-ounce bag of dark chocolate chips
1 tsp. coconut oil
1 ½ Tbs. maca powder (adjust to taste)
¼ cup pumpkin seeds
¼ goji berries
4 Tbs. coconut flakes
INSTRUCTIONS
- Prep a mini-muffin tin with liners for about 15 cups.
- Combine the chocolate chips and coconut oil in a microwave-safe bowl, and microwave in 30-second increments, stirring in between.
- Add maca powder and mix well.
- Fill each muffin tin with chocolate and top with with pumpkin seeds, goji berries, and coconut flakes.
- Pop in the freezer for about 30 minutes until set.
