THE ENERGY BITES WE CAN’T GET ENOUGH OF
The first time we tasted Ground Up nut butters, we were in love. Made of simple, wholesome ingredients, the line includes everything from classics like almond and cashew butter to where-have-you-been-all-my-life flavors like Coconut Cardamom with Chia Seed.
And then we learned that in addition to making incredible-tasting nut butters, Ground Up also provides job training to women overcoming adversity in the Portland area. As a company that’s committed to supporting organizations that align with our core values, we knew we wanted to partner with them.
The result: Ground Up x barre3 Cashew Coconut Butter. This flavor—which includes no additional sweeteners—is so delicious that we’re perfectly content spreading it on a piece of toast (or, let’s be honest, eating it directly from the jar), but Ground Up did us one better, creating a recipe based on the collab. Rolled in coconut and perfectly bite-size, these delightful little balls have become our go-to snack.
Makes 16 balls
Dietary Notes: Whole 30 Approved, Gluten-Free, Dairy-Free, Vegan, Refined Sugar-Free
Rolled in coconut, these bites have the texture of cookie dough and the flavors/reminisce of a dreamy afternoon on the beach. Really, what more could you want?
INGREDIENTS
1/2 cup Ground Up x barre3 Cashew Coconut Nut Butter (one 4-oz. jar)
1 cup pitted Medjool dates (18 to 20 large dates)
1 1/3 cup unsweetened, shredded coconut, divided
1 cup unsalted dry-roasted cashews
1 cup pitted, dried apricots (about 28)
1/4 teaspoon sea salt
INSTRUCTIONS
- In a food processor, combine the nut butter, dates, 1 cup coconut, cashews and sea salt. Blend until a sticky dough is formed, approximately 2-3 minutes.
- Add the apricots. Pulse for 30 seconds to a minute, depending on how big you want the chunks.
- Roll into 1 1/2-inch balls. Roll each ball in the remaining 1/3 cup coconut to finish.
- Store in an airtight container for up to 2 weeks in the refrigerator or up to 2 months in the freezer.
