Sweet Potato Fries with Jenna Beaugh
I’m so excited to share this delicious, simple Sweet Potato Fries recipe with all of you! I recently spent an afternoon in the kitchen with my food hero, Jenna Beaugh, from the blog Eat, Live, Run. Sweet Potato Fries
Ingredients:
1 large sweet potato
Drizzle of olive oil
Pinch of sea salt
1/4 tsp cayenne pepper (option to add more if you like it spicy)
1 cup full-fat Greek yogurt
1/4 tsp. fresh ginger
Juice from 2 limes
1. Pre-heat oven to 400F.
2. Cut sweet potatoes into matchsticks and spread them out on a baking sheet. Drizzle with olive oil and sea salt. Bake them for about 30 minutes.
3. For the dipping sauce, combine full-fat Greek yogurt, ginger, and lime juice in a bowl and whisk until blended.
