OUR NEW FAVORITE GRANOLA IS FROM OUR NEW FAVORITE COOKBOOK
Ever since Sarah Adler’s new cookbook, Simply Real Health, came out, it’s been our go-to recipe source—and this absurdly good granola has become our go-to snack. We’re not alone. “This is my all-time favorite morning—or any time of day—crunchy treat,” says Adler. “It’s delicious on its own, sprinkled over whole-milk Greek yogurt, or as a cereal with whole milk.” The best part? It takes less than 30 minutes to make and, once it cools, keeps well in a sealed container in the fridge for up to one month.
PUMPKIN-CHOCOLATE GRANOLA
Makes approximately 8 servings.
INGREDIENTS
2 Tbsp. extra-virgin unrefined coconut oil
¼ cup organic maple syrup
3 tsp. cocoa powder
½ tsp. cinnamon
½ tsp. vanilla extract
½ tsp. sea salt
2 cups large coconut flakes
2 cups almonds, chopped
1 cup pumpkin seeds, shelled
1½ Tbsp. chia seeds
INSTRUCTIONS
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a saucepan over medium heat, melt coconut oil and maple syrup. Add cocoa powder, cinnamon, vanilla, and sea salt to the mixture, and stir well.
- In a large prep bowl, add the coconut flakes, almonds, pumpkin seeds, and chia seeds, and drizzle the coconut-maple mixture over the top. Toss well, and spread evenly on the baking sheet. Bake for 15 minutes or until crisp, stirring the mixture halfway through.
