OUR FAVORITE POPCORN RECIPE IS SO EASY (+ SO DELICIOUS)
Have you tried popcorn with nutritional yeast? It seems to be everywhere lately (even at indie movie theaters!), and we can’t get enough of it. We make it for office meetings, get-togethers with friends, a treat for our kids’ school lunches…and, let’s be honest, we’ve been known to polish off entire bowls by ourselves.
Here’s our go-to recipe:
INGREDIENTS
1/2 cup popcorn kernels (non-GMO)
1/4 cup coconut oil
3 Tbs. ghee, melted (if we can’t find this we can use organic butter)
1/4 cup nutritional yeast
1/2 tsp. kosher salt
Fresh ground pepper, to taste
INSTRUCTIONS
- Melt the coconut oil in a large pot (we like a Dutch oven for this, but feel free to use any large vessel).
- When the oil is hot, add the popcorn kernels, shaking around to get an even layer. Place the lid over the pot but (this is key) make sure it’s slightly askew so steam can escape.
- Cook, shaking the pot occasionally, until the pops are a few seconds apart.
- Pour popcorn into a bowl, drizzle with the ghee, and add the nutritional yeast, salt, and pepper. Toss everything together and serve.
