Her go-to summer salad combines hydrating watermelon and peppery arugula with a refreshing lemony dressing—and it doesn’t require you to go anywhere near the dreaded oven.
SUMMER WATERMELON AND ARUGULA SALAD
Serves 2
INGREDIENTS:
5 cups arugula
2 cups watermelon, cubed
½ avocado
2 Tbsp. pumpkin seeds
¼ cup extra-virgin olive oil
Juice of ½ a lemon
¼ tsp. salt
¼ tsp. ground black pepper
INSTRUCTIONS:
- For the dressing, add the olive oil, lemon juice, salt, and pepper together in a small bowl or jar. Mix well.
- For the salad, add in the arugula, watermelon, avocado, and pumpkin seeds to a medium bowl. Drizzle on the dressing, and enjoy!
