A SKIN-BOOSTING SUMMER SALAD
Sun, saltwater, sweat, sunscreen. Summer can be extra tough on skin, and that’s just one of the reasons we love this salad by Carolyn Yachanin, the creator of Copina Co. The sweet potatoes have high levels of beta-carotine, which converts to skin-boosting Vitamin A when ingested, and they’re packed with collagen-producing Vitamin C. The avocado provides Vitamin E, which helps prevent skin-cell damage, and the salmon delivers omega-3 fatty acids, which help retain moisture in your skin. Bonus: The salad is delicious and so simple to throw together, making it a great summer go-to.
INGREDIENTS
1 cup fresh arugula
1/2 cup roasted sweet potatoes
1/2 avocado
1 radish
1 medium-size heirloom tomato
2 ounces smoked salmon
Juice of 1/2 lemon
1 Tbsp. olive oil
Dash of sea salt
Dash of cracked black pepper
INSTRUCTIONS
1. Toss the arugula, lemon juice, and olive oil together in a serving bowl. Set aside.
2. Slice the avocado, radish, and heirloom tomatoes according to the size you’d like.
3. Plate the sliced veggies with the salmon and roasted sweet potatoes onto the salad greens. Top with sea salt and cracked pepper if desired, and enjoy!
