Mint Cacao Chip Nice Cream

Most ice cream recipes require a lot of time, patience, and special equipment. Our solution? A bowl of this delicious Mint Cacao Chip Nice Cream. All it takes is blending up a handful of ingredients in the food processor and you'll get to have your favorite summer treat in no time! INGREDIENTS

1 1/2 cups raw cashews, soaked in the refrigerator overnight

3 frozen bananas

1/4 cup nut mylk

2 Tbs. coconut oil

1 tsp. vanilla extract

1/2 tsp. peppermint extract

1/4 tsp. spirulina (optional, for color)

2 Tbs. cacao nibs

Cacao nibs, dried coconut, and fresh berries to garnish (optional)

INSTRUCTIONS

Blend all ingredients in a food processor until smooth.
Divide among 4 bowls and top with desired garnishes. Serve immediately.
To enjoy this recipe as a colder treat, divide mixture into individual servings among 3-4 small containers. Cover mixture and chill in freezer until firm. Remove from freezer and let soften 3-5 minutes before enjoying.
