RICE & BEANS WITH SALSA
2 servings
INGREDIENTS:
1 can black beans
Salsa (we recommend Muir Glen organic salsa in a jar)
1 avocado
1/2 cup brown rice
1 cup chopped red and yellow bell peppers
1 cup chopped kale
2 tablespoons coconut oil or olive oil
Drizzle of olive oil and a pinch of salt to taste (optional)
PREPARATION:
1. Boil 1 cup water.
2. Add 1/2 cup uncooked brown rice.
3. Simmer for about 35 minutes or until water is gone and rice is tender.
4. Heat 1 can of black beans.
5. Sautée over medium heat red and yellow pepper and chopped kale in coconut or olive oil.
6. Add all ingredients into a bowl and enjoy!
