Sweet & Savory Pistachio-Stuffed Dates
This super-simple recipe is one of our favorite ways to curb sugar cravings. Pistachios are a superfood, containing healthy fats, complete protein, and fiber. You’ll also get fiber and healthy fat from the coconut, plus iron and potassium—and a nice hit of sweetness—from the dates.

Serves 14
INGREDIENTS
1/2 cup unsalted shelled pistachios
2 Tbs. olive oil
14 Medjool dates, pitted
3 Tbs. unsweetened shredded coconut
1/2 tsp. coarse sea salt
INSTRUCTIONS
1. In a food processor combine the pistachios, 1 Tablespoon olive oil, and 1 ½ Tablespoons shredded coconut. Process until a thick paste is formed, scraping down the sides as necessary, about 2 minutes.
2. Stuff each date with a bit of the mixture, and then top with a sprinkle of shredded coconut, coarse sea salt, and a drizzle of olive oil.
3. Store dates in an airtight container in the fridge for up to one week.
