Lentils and sweet potatoes are the highlight of this simple and healthy salad. By providing both high fiber and protein for stable blood sugar, the lentils make it filling enough to be a meal by itself. They’re are also a great source of minerals, including iron, magnesium, and potassium. The sweet potato provides more than 700% of your daily required dose of Vitamin A, essential for healthy immune function.
