1/2 onion, finely chopped
2 garlic cloves, chopped
10 mushrooms, stems trimmed
1 bunch lacinato/black kale, rinsed, tough rib removed, and torn into pieces
1 can white beans, rinsed
1 tbsp apple cider vinegar (optional)
